It's Salmon/Fishing season in BC. We cooked/smoked a delicious Steelhead from Lepp Farm Market in Abbotsford BC! Let us know what you think about this recipe.

HOT SMOKED STEELHEAD ON CRACKERS WITH CREAM CHEESE, CAPERS ND PURPLE ONION

Brine:
8 cups of cold water
10 Tablespoons of Kosher Salt
10 Tablespoons of brown sugar
Stir the salt and brown sugar until it has been completely dissolved in the water.
Put the steelhead filet ( 1 to 2 LBS. ) in the brine and refrigerate for 2 hours.

After 2 hours in the brine take the steelhead filet out and dry it off well. Ater drying it off you may want to run an electric fan on high with the streelhead filet 12 inches away from the fan. After 20 minutes you will have a fairly dry surface.

Heat the Island Grillstone up to about 350 F
Let the wood chips and chunks that sit over the other burners set to high heat run for about 20 minutes or until you start to see the wood start to smoke. Turn the burners off that are under the wood chips and chunks.
Leave the burner under the Island Grillstone on high.

Wood is now smoking and your stone is up to 350F. Put the steelhead filet on the stone and close the hood on the grill.
In 30 minutes remove and plate the steelhead letting it rest for about 5 minutes.
***Note for filets over 2 LBS. , you may need to add 5-7 minutes to the grilling time. Another trick would be to cut thicker filets in half so that you can maintain the 30 minute grilling time.
